Food Post Friday: Curry Pumpkin Mac & Cheese


I was craving gooey mac & cheese last week. Then this happened. 

Curry Pumpkin Mac & Cheese

What you need:

  • 1 medium yellow onion, diced fine

  • 1-2 cloves garlic, minced

  • ~1.5 cups smooshed pumpkin (I used frozen, canned should work fine)

  • curry powder (store bought or your own mix)

  • 1 box whole wheat macaroni

  • ½ 500g container plain Greek yogurt

  • ~1 cup shredded cheddar cheese

  • panko crumbs + grated Parmesan (optional)

What you do:

  1. Boil water and cook pasta al dente. Preheat oven to 350 F.

  2. While pasta is cooking, toss onion and garlic in a bit of olive oil over medium heat until onion is translucent. Add pumpkin and curry, cook for a few more minutes until well mixed and delicious.

  3. Drain pasta, reserving a bit of the water. Mix pasta, pumpkin mixture, Greek yogurt, and cheese as needed. If the mixture is too thick you can add some of the reserved water to thin it out (I didn't).

  4. Pack mixture into casserole dish of your choice. Sprinkle with panko + parmesan mixture and bake until topping is golden brown.
