Jackson and I had a few people over for a brunch potluck on Sunday to celebrate my birthday. Our contribution to the potluck was waffles, complete with a topping station. I had the BEST TIME planning and putting this together!
We had a fridge full of leftovers when Monday rolled around, so we turned them into dinner in the best possible way - waffle burgers!
What we used:
- 2 leftover waffles (recipe here)
- 1.5 leftover burgers, sliced into strips
- grilled red and yellow peppers
- spicy mustard
- cheddar cheese
Slap those things together, toss them into a panini press until melty and delicious. I also cut a sweet potato into bite sized pieces, tossed it in olive oil, sprinkled with salt, pepper, and rosemary and baked at 450 for about 20 minutes (until those bad boys were soft and delicious). The pasta salad was leftovers from my mom so I'm not sure of everything she used, but I do know she swapped mayo for Greek yogurt and filled it full of delicious veggies.
