Food Post Friday: Blueberry Cake

Last week I found myself with a giant container of blueberries that were thisclose to a sad, garbage-can related death. Not wanting to let some of the last berries of the season go bad in the fridge I decided to turn them into delicious baked goods. The cake below is an adaptation of this recipe made with mostly whole wheat flour and not a lot of sugar, resulting in a dense, semi-sweet dessert that is just bursting with delicious berries. Sadly I neglected to take a photo, so you'll just have to use your imagination. 

What you'll need:

  • 1 cup whole wheat flour
  • 1/2 cup all purpose flour
  • 2/3 cup sugar
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1/3 cup vegetable oil
  • 1 egg
  • 1/3 cup milk
  • 2 cups blueberries

What you'll do:

  1. Preheat oven to 400°F and grease 8" cake pan
  2. Sift together flour, sugar, salt, and baking powder into a large bowl
  3. Beat egg and combine with milk and oil. Pour into dry mixture and mix until just combined. Fold in blueberries.
  4. Bake for 30-35 minutes, or until toothpick inserted in centre comes out clean
