Since J and I moved into our new apartment, the amount of time I spend in the kitchen has increased dramatically. I’m still in awe of our new cooking space and can’t quite believe just how much more functional it is than our old kitchen. Counter space! A dishwasher! A...microwave? What is this madness?!
Since I’m spending so much time in the kitchen these days, and since I've decided to move this blog in a more lifestyle/fun direction, this seems like the opportune time to revive my Food Post Friday series. I like to use this series to post super simple recipes that I make throughout the week when time is a bit tighter than it might be on the weekends.

BBQ Naan Pizzas
Portion size: 4
4 pcs naan
1 tbsp. olive or other cooking oil
1 med yellow onion, sliced
1 red bell pepper, sliced
2 cups mushrooms, sliced
1⁄4 tsp smoked paprika (or regular)
1⁄4 chipotle chili powder (or regular)
1 cup shredded cheese, divided into 4
1⁄4 cup barbecue sauce, divided into 4
Preheat oven to 425 degrees.
In a large frying pan, heat oil over medium heat. Add onion, bell pepper, and mushrooms to hot pan and cook until desired softness, stirring regularly.
Spread barbecue sauce over four pieces of naan and top with vegetables and cheese. Bake in oven until cheese is bubbly and edges begin to brown, about 10-15 minutes.
Allow to sit for 2-5 minutes to cool. Cut into pieces and serve.
Swap barbecue sauce for tomato and try with different toppings such as spinach and tomato, hot peppers and feta cheese, or jalapeno peppers and pineapple.
